Composition: Condensed tannin extracted from exotic species wood, grape skin tannin and gallic tannin
Applications

- During white, red and rosé wine maturation
Dosage:
- White and rosé musts: 10 - 15 g/hL (0.8-1.3 lb/1,000 gal)

Instructions to use:
Dissolve EnartisTan Elegance at a 1:10 ratio in water or wine while mixing continuously. Add to wine during a pump-over with a dosage pump or Venturi tube.

For the chocolate connoisseur! Our rich Dutch cocoa powder has been alkalised (to reduce the acidity of the cocoa powder), giving it a beautiful darker colour, a less bitter flavour, and the ability to dissolve more easily in milk. The dark reddish-brown colour of Dutch cocoa powder is stunning. It is naturally made from organic raw cacao beans which are fermented at a low temperature and then dried and grounded into cacao powder.
It has a slightly higher alkalinity than our Dark Cocoa Powder and a higher cocoa fat content of 20 to 22 percent, giving it a richer, cleaner, and chocolatey flavour.

We know how you like your perfect comfort food - Polenta.. soft and creamy, yet with a slightly textured bite. The Italian staple, originated as a peasant food from northern Italy where it was cooked over open flames in a special vessel, a paiolo, that was made from copper, allowing the heat to be distributed evenly and with a curved bottom to stop it catching over its long cooking time. With the Artisan's Bottega Polentamatic you can now make such traditional Polenta in your own kitchen.
Mix the water and milk in your pot, place it over a medium heat and watch it carefully with whisk in hand and polenta nearby so you can catch it before it boils over. The Artisan's Bottega Polentamatic's copper pot is well-designed to let you cook in ease.
The polenta does not stick to the pot easily thanks to the electric stirrer. As the liquid comes up to the boil, slowly rain in the polenta with one hand and whisk with the other. Once it comes to the boil, turn the heat down to as low as it will go, throw in a large pinch of salt and continue whisking at regular intervals. This is very important in order to avoid lumpy polenta.
Cook for at least 30 minutes. The polenta is ready once you taste it and can no longer feel a grainy texture on your tongue. Mix in the butter and parmesan and season quite heavily with more salt and white pepper. Cover your pot with a lid and leave it in a warm spot to rest.

Once practised as a matter of survival, Italian salumi is a form of preserved meats, primarily parts of the pig, commonly known as prosciutto, coppa, pancetta, guanciale, and salami in the world.
The craft of Italian salumi, now accessible to the American cook, from the authors of the best-selling Charcuterie. Michael Ruhlman and Brian Polcyn inspired a revival of artisanal sausage making and bacon curing with their surprise hit, Charcuterie. Now they delve deep into the Italian side of the craft with Salumi, a book that explores and simplifies the recipes and techniques of dry curing meats.
As the sources and methods of making our food have become a national discussion, an increasing number of cooks and professional chefs long to learn fundamental methods of preparing meats in the traditional way. Ruhlman and Polcyn give recipes for the eight basic products in Italy’s pork salumi repertoire: guanciale, coppa, spalla, lardo, Lonza, pancetta, prosciutto, and salami, and they even show us how to butcher a hog in the Italian and American ways.
This book provides a thorough understanding of salumi, with 100 recipes and illustrations of the art of ancient methods made modern and new.
