Understanding IBU and Bitterness in Beer
IBU stands for International Bitterness Units. It is the standard measurement used to estimate bitterness in beer, mainly from hops.
Understanding IBU helps you choose recipes, compare beer styles and make better decisions when adding hops to your own brew. But IBU is not the whole story. Two beers with the same IBU can taste very different depending on malt sweetness, alcohol level, yeast character and hop variety.
What does IBU measure?
IBU measures the concentration of bitter compounds, called iso-alpha acids, in finished beer.
These compounds come from hop alpha acids during the boil. The longer hops boil, the more bitterness they contribute, although the exact amount depends on the hop variety, wort gravity and brewing process.
As a rough guide:
- 5 to 15 IBU: low bitterness
- 15 to 30 IBU: balanced or moderately bitter
- 30 to 50 IBU: noticeably bitter
- 50+ IBU: high bitterness
These ranges are useful, but they should not be treated as rules.
Why high IBU does not always taste bitter
A high IBU beer can still taste smooth if it has enough malt sweetness, body or alcohol to balance the bitterness.
For example, a rich stout may have more measured bitterness than a pale lager but taste less sharp because roasted malt, residual sweetness and fuller body soften the overall impression.
A dry, light-bodied pale ale with moderate IBU can taste more bitter than a stronger beer with a higher IBU.
How hops create bitterness
Hop bitterness comes mainly from hops added early in the boil.
Early boil additions
Hops added at the beginning of a 60-minute boil contribute the most bitterness. Much of their flavour and aroma is boiled away, leaving primarily bitterness.
Late boil additions
Hops added in the final 10 to 15 minutes contribute less bitterness and more hop flavour.
Whirlpool and dry hopping
Whirlpool additions and dry hopping are mainly used for aroma and flavour. They can add some perceived bitterness, but not in the same way as a long boil addition.
IBU and beer styles
Different styles often sit within broad bitterness ranges.
- Light lager: around 8 to 18 IBU
- Pale ale: around 25 to 45 IBU
- India pale ale: around 40 to 70+ IBU
- Amber ale: around 20 to 40 IBU
- Stout: around 25 to 60 IBU
- Wheat beer: around 8 to 20 IBU
A recipe does not need to match a style guide exactly. Use IBU as a guide, then adjust based on the beer you want to drink.

IBU calculations consider several factors:
- Hop weight
- Hop alpha acid percentage
- Boil time
- Wort volume
- Original gravity
- Hop addition timing

How to adjust bitterness in a recipe
To increase bitterness:
- Add more hops early in the boil
- Use a hop variety with higher alpha acids
- Increase the boil time for a bittering addition

To reduce bitterness:
- Use less early-boil hops
- Move some hop additions later in the boil
- Choose lower-alpha-acid hops
- Increase malt body or sweetness for balance
Changing bitterness is not only about changing IBU. A small amount of caramel malt, a different yeast strain or a fuller body can change how bitter a beer tastes.
