Estimating Potential Alcohol in Homemade Wine

Before fermentation begins, your juice contains sugar. Yeast converts that sugar into alcohol, carbon dioxide and flavour compounds.

Measuring the sugar level gives you an estimate of your wine’s potential alcohol. This helps you decide whether the juice is ready to ferment, whether sugar adjustment may be needed and whether your yeast is suitable for the expected strength.

What is potential alcohol?

Potential alcohol is the estimated alcohol percentage your wine could reach if the available fermentable sugar is fully converted by yeast.

It is an estimate, not a guarantee.

Final alcohol can be affected by:

  • Yeast strain and alcohol tolerance
  • Fermentation temperature
  • Nutrient availability
  • Juice acidity and pH
  • Whether fermentation finishes completely
  • Any sugar added before or during fermentation

How to estimate potential alcohol

You can estimate potential alcohol using one of three common measurements:

  • Brix
  • Specific Gravity
  • Baumé

Using Brix

A rough estimate is that 1° Brix can produce around 0.55% alcohol by volume.

For example:

  • 20 Brix may produce around 11% ABV
  • 22 Brix may produce around 12% ABV
  • 24 Brix may produce around 13% ABV

This is only a guide. The best approach is to use a calculator that accounts for the relationship between sugar concentration and alcohol.

Using Specific Gravity

Specific gravity is measured with a hydrometer. You take an original gravity reading before fermentation, then a final gravity reading once fermentation is complete.

The difference between the two readings is used to estimate alcohol content.

For example:

  • Original Gravity: 1.090
  • Final Gravity: 0.996

This would generally produce a wine around 12% ABV, depending on the formula used.

Using Baumé

Baumé is commonly used in winemaking as a quick guide to potential alcohol.

A simple approximation is:

Potential alcohol ≈ Baumé reading

For example, 12° Baumé may indicate approximately 12% potential alcohol.

This is helpful for quick planning, but a calculator will give you a more refined estimate.

What alcohol level should homemade wine be?

Many table wines finish between 11% and 14% ABV.

Lower alcohol wines can feel lighter and fresher. Higher alcohol wines can have more body and warmth, but they also place more stress on yeast and may need more attention during fermentation.

A good target depends on the style:

  • Light white wine: around 10.5% to 12%
  • Rosé: around 11% to 13%
  • Most table reds: around 12% to 14%
  • Dessert wine: often higher, or sweetened after stabilisation

Can you add sugar to increase potential alcohol?

Yes. Winemakers sometimes add sugar before fermentation to raise the potential alcohol of low-sugar juice. This is often called chaptalisation.

However, more sugar does not automatically make better wine. Excess sugar can stress yeast, increase the risk of stuck fermentation and make the finished wine taste unbalanced.

Before adding sugar, check:

  • Your current Brix, SG or Baumé reading
  • Your target alcohol level
  • The yeast’s alcohol tolerance
  • Whether acidity needs adjustment too

What happens if potential alcohol is too high?

Very high sugar juice can lead to:

  • Slow fermentation
  • Stuck fermentation

Is potential alcohol the same as final alcohol?

No. Potential alcohol is an estimate before fermentation. Final alcohol depends on how much sugar the yeast actually ferments.

How do I know if my wine has finished fermenting?

Take hydrometer readings a few days apart. If the reading remains stable and is at or near the expected final gravity, fermentation is usually complete.

Can I make wine stronger by adding more yeast?

No. Adding more yeast does not create more alcohol unless additional fermentable sugar is available. The yeast also needs to tolerate the target alcohol level.
