An extract kit is a tin of concentrated wort that has already been mashed and hopped for you. You add water and a fermentable, pitch the yeast and wait. It is how most Australians started brewing and it still makes good beer, which is why we keep a wall of it.
Coopers is the backbone here, with the Original Real Ale, the Original Dark Ale and the Thomas Cooper Golden Crown Lager. If you want to push a bit further, the Coopers Voyage series brings partial mash steps into a kit, with the Saison Voyage and the Supercrisp Mid advanced recipe pack. Morgans do a Stone and Wood Pacific style as a 3.2 kg recipe pack. We also build complete recipe kits in house for the beers people actually ask us for, so there is a Stella Artois style, a Little Creatures Pale Ale style, a Grolsch style and a Corona style, each with everything in the box. Mangrove Jacks covers cider if beer is not the ask this time.
The thing that changes a kit brew most is fermentation temperature, and steady matters more than the exact number. Wrap the fermenter or move it somewhere the overnight swing is small. Plenty of the off flavours people blame on the tin are really a cold night and a warm afternoon.
