How To Brew?
Suitable for one or two stage fermentation.
- Mixing: Pour 2 litres of hot water into sanitised fermenter, add contents of can and 1kg (2.25lbs) of another fermentable eg dextrose, malt or Morganโs Master Blends. Stir contents to dissolve, add cold water to bring the total contents up to 23 litres. When temperature is between 22-30 degrees C (71-86 deg F) add yeast and stir actively for 30 seconds. Morganโs kits need no boiling due to our unique kittling during manufacture.
- Fermenting: Seal fermenter with lid and air lock, allow to ferment at a constant temperature between 22 โ 30 deg C until specific gravity reaches 1005 or below. Complete fermentation will take 5 days at 25 deg C (77 deg F) but will take longer in lower temperatures.ย Warning: Using a beer hydrometer, be sure fermentation is finished (SG 1005 or below) before bottling, adding only the correct amount of sugar to each bottle, otherwise overgassed bottles could explode.
- Bottling: Sterlize bottles, add 6g (0.212oz) of sugar to each 750 ml bottle, 3g (0.106oz) for every 375ml then fill with brew to the normal level and cap.
- Maturing: Allow bottles to stand at a temperature of 22-30 deg C for 5 days to allow beer to carbonate. Allow another 10 days at room temperature to fully mature. The finished beer will continue to improve with further ageing.

Thomas Cooper had a big family. With two wives and 19 children, who went on to have children and grandchildren of their own, his brewing secrets and recipes were passed down. It is not surprising then that today 5th and 6th generation Coopers oversee and work at the brewery. They are the custodians of all these family-brew secrets.
Luckily for beeristas one such secret is an Amber Ale recipe. Rich deep copper in colour, this mid bodied Ale has a biscuity malt palate balanced by toffee caramel sweetness and a nutty finish with citrus hop notes. And this secret is now here for grabs.

Fermentis Safcider, selected from the Champagne region, can be used for all types of ciders, even under difficult fermentation conditions. This cider yeast works at a wide temperature range between 10-30ยฐC (50-86ยฐF) with ideal temperatures between 18-24ยฐC (64-75ยฐF).ย

Active dry yeast recommended to brew a diversity of beers amongst which abbey style beers known for their high alcohol content. It ferments very fast and reveals subtle and well-balanced aromas. To maintain the aromatic profile at the end of the fermentation, we do recommend to crop the yeast as soon as possible after fermentation.

This yeast displays an apparent attenuation of approximately 70%, has a temperature range of 12-25?C ideally 15-20?C, total bacteria of less than 5/ml. Yeast with good sedimentation, forms no clumps but a powdery haze when resuspended in the beer. Pitching rate in primary fermentation 2.5 to 5 g/hl and for bottle conditioning 50 to 80 g/hl at 20?C.
REHYDRATION INSTRUCTIONS
Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 27?C? 3?C. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel. Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20?C. Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes, then mix the wort using aeration or by wort addition.
