Essedue

Essedue build meat slicers and nothing else. The whole range is made in their own factory at Cura Carpignano, about twenty kilometres south of Milan, in anodised aluminium, and this is the widest selection of them in Australia.

Sizing is by blade diameter, and it is the only decision that really matters. The 195AF is the entry machine for a home kitchen. The 220AF, 220AFP and 250AF suit a family that cures its own salami and wants to slice it properly. The 220AFAB and 250AFAB PROF, the 300C, 300E, 300FF and 350AF are built for volume, and the 350ATC adds a variable speed motor for working across soft and hard product without tearing either.

The 300 Vertical Ham is the specialist. If you are slicing a whole prosciutto, a vertical machine holds the leg properly and a horizontal one fights you.

Most models carry an onboard sharpener, which is the feature that decides whether a slicer stays sharp or becomes a machine that tears. Blades are the consumable: Slayer smallgoods edge, serrated edge for bread, and teflon coated for a cleaner glide, in 250mm and 300mm.

Parts are listed by their part number and the models they suit, and we stock the ones that actually fail: drive belts, indexing cams, perspex guards, graduated thickness knobs, slide bars, motors and capacitors. Send us the model number off the plate and we will match it.

See one running at Laverton North or Epping. See also meat slicers and slicer parts and blades.
