If sausage is the goal, Sausages Made Simple and Home Made Sausage by Carter and Peisker are more practical than they look, and Butchery and Sausage Making for Dummies is a fair place to start with no background at all. Cheese Making in Australia by Valerie Pearson, now in its second edition, is written for our milk and our conditions, while Making Artisan Cheese by Mary Karlin goes wider. Vegan Dairy covers milk, butter and cheese from nuts and seeds.
