For curing, SALUMI: The Craft of Italian Dry Curing is the reference, and The Complete Book of Butchering, Smoking and Curing covers the whole animal. If sausage is the goal, Sausages Made Simple and Home Made Sausage by Carter and Peisker are more practical than they look, and Butchery and Sausage Making for Dummies is a fair place to start with no background at all. Cheese Making in Australia by Valerie Pearson, now in its second edition, is written for our milk and our conditions, while Making Artisan Cheese by Mary Karlin goes wider. Vegan Dairy covers milk, butter and cheese from nuts and seeds.
On the drinks side there is Craft Brew with fifty home brew recipes, The Big Book of Kombucha, and Kombucha, Kefir and Beyond by Alex Lewin. For preserving, Food in Jars works in small batches through the year.
