Since the time of the Vikings, who infused sea salt with smoke from native wood fires, smoked salt has been a common Scandinavian seasoning. At Pialligo Estate Smokehouse in Canberra, the Olsson family has continued this proud Nordic tradition by smoking Australian sea salt flakes from South Australia's Eyre Peninsula over native river red gum (eucalyptus camaldulensis) for 72 hours in the typical northern European style.

The aromatic and complex characteristics of the Australian red gum wood are improved by the smoking process, resulting in a special salt.
Olsson's Salt is proud to launch their Red Gum Smoked Sea Salt in partnership with Pialligo Estate Smokehouse in Canberra in 2016, after three years of consultation with The Bridge Room's Ross Lusted.
