This is also known as acid or sour malt and it is used to lower the ph (meaning increasing acidity!) of your mash, when the quality of the water. A low ph of the mash leads to several benefits, including: intensified flavour, improved stability, light colour, rounded and more balanced flavour. EBC: 3 – 8 Min. buy: 1kg (10 x 100g units)

By Best Malz Tip: use 1% to drop the ph by 0.1. It is advisable not to use more than 10% of the total grain bill.
