They feature a tough, galvanized coating, a shatter proof core and a wear resistant surface, paired with an ergonomic shape and attractive German design. The cut of the steel determines the surface quality and the abrasion on the cutting edge of the knife. The extent of the surface roughness is a result of the grooves created during the sharpening.
A sharpening steel may become soiled and develop a grease barrier after many uses. This barrier will prevent the steel from doing its job and “biting” the knife for sharpening. To clean the steel, wash it regularly in soapy water with mild alkaline-based detergent (not any acid-based detergents) and dried immediately to avoid rust.
